Chicken breast with white bean puree

Chicken breast with white bean puree is an idea for such a healthy dinner. Chicken marinated in soy sauce with the addition of green, homemade pesto. Served with roasted hazelnuts and puree of white bean cannelini with the addition of tahini sesame paste. Healthy and tasty.

Składniki / Ingredients:

For green pesto

  • 2 glasses of fresh basil
  • 1 glass of fresh coriander
  • 200 ml olive oil
  • 4 garlic cloves
  • salt pepper
  • 3 tablespoons grated Parmesan cheese
  • 30 g pistachios
  • 50 g roasted hazelnuts

For bean puree

  • 2 cans of cannelini beans (480 grams after pouring water)
  • 2 tablespoons tahini paste
  • herbal salt to taste
  • freshly ground pepper to taste
  • juice of 1 lemon

For chicken breast

  • 2 chicken breasts
  • ½ tsp hot pepper powder
  • 1 teaspoon of sweet pepper powder
  • 1 teaspoon dried rosemary
  • 1 tablespoon of oil
  • 2 tbsp light soy sauce
  • salt and pepper

Sposób wykonania / Instructions:

For green pesto

  • Rinse basil and coriander under running water. Drain with a paper towel. Add basil leaves, coriander, pistachios and garlic to a blender and mix at low speed. When the slurry begins to form, add the oil slowly. Season with salt. Add grated Parmesan cheese. Finally, roast the hazelnuts in a dry frying pan. Add nuts and combine with pesto.

For bean puree

  • Place all ingredients in a blender and mix to a smooth mass. Heat before serving
  • For chicken breast
  • Wash chicken breasts, dry them. Season with spices. Rub with oil and soy sauce. Leave to marinate for about 1 hour
