Cod with chickpea salad

Cod with chickpea salad. I really like chickpeas. This time a salad with peppers, dried and fresh tomatoes and black olives. Everything with the addition of aromatic spices. Healthy, colorful and tasty.

Składniki / Ingredients:

For salad

  • 1 can of chickpeas 400ml drained from the water
  • salt
  • pepper
  • Roman cumin
  • smoked pepper
  • nutmeg
  • 1 tbsp olive oil
  • 1 red pepper diced
  • 1 yellow pepper diced
  • 6 large halves of tomatoes dried in oil or oil cut into smaller pieces
  • 1 clove of garlic
  • 1 bunch of parsley finely chopped
  • 8 cherry tomatoes diced
  • a handful of black olives cut into slices
  • 1-2 tablespoons extra oil
  • ½ tsp honey or maple syrup
  • 1 tablespoon lemon juice
  • salt and pepper
  • 1 tablespoon of tagine paste can be a substitute for tomato pesto

For cod

  • 2 fillets of cod with rind about 150 g
  • salt pepper
  • 2 tablespoons of oil
  • 1 tablespoon of butter

Sposób wykonania / Instructions:

For salad

  • Add the chickpeas to the hot oil and mix with the spices. Fry until gold. Let cool.
  • Put all ingredients in a bowl and mix. Set aside for 10 min

For cod

  • Season the fish with salt and pepper. Heat the pan, add butter and oil. Lay the fillets skin down and fry on moderate heat for 3 minutes on each side. Remove from pan and put on paper towels.
