Cod with plum sauce

Cod with plum sauce and plum salsa. Sounds like a weird combination? Nothing could be more wrong. The fish tastes really delicious with plum sauce and red wine. I was positively surprised by the taste. Served with plum salsa. It may sound surprising but the most important thing is that it is tasty

Składniki / Ingredients:

For plum sauce

  • 20 prunes
  • 1 onion diced
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon chili cayenne pepper
  • 2-3 drops of chili sauce
  • 1 tablespoon soy sauce
  • 125 ml red wine
  • 1 clove of garlic crushed
  • 1 tablespoon of clarified butter

For plum salsa

  • few plums diced
  • few strawberries diced
  • 1/2 mango diced
  • 1 diced celery stalk
  • fresh chopped parsley
  • fresh thyme
  • fig balsamic vinegar to taste
  • salt optional
  • pepper optional
  • brown sugar optional

For cod

  • 2 cod fillets
  • 4 garlic cloves crushed
  • 1 lemon juice
  • 2 tablespoons of olive oil
  • pepper
  • salt
  • ginger
  • 2 sprigs of dill

For plum sauce

  • Put the onions and prunes into a saucepan with clarified butter. Simmer until the ingredients are overcooked and fall apart. Add red wine. Add garlic. Season the sauce with the remaining ingredients. Blend the sauce to combine the ingredients

For plum salsa

  • Mix all ingredients in a bowl. Season with salt, pepper and brown sugar. Pour balsamic vinegar.

For cod

  • Preheat the oven to around 180 ° Wash the fillets and dry them with a paper towel. Rub the fillets with salt, pepper, garlic, and lemon juice. Season with ginger. Then spread the aluminum foil with olive oil. Put the fish in foil, put dill branches on top and wrap it well. Bake for about 30 minutes.
