Couscous risotto with pork tenderloin

Couscous risotto with pork tenderloin. Couscous with apple, pear and white wine, finished with roasted almond flakes. Served with pear stuffed with blue cheese. Everything in the company of pork tenderloin.

Składniki / Ingredients:

For couscous

  • 1 small onion
  • 2 cloves of garlic squeezed
  • 1/2 cup of large couscous
  • 1/4 glass of white wine
  • 1/4 cup of apple juice
  • 1/2 apple
  • 1/2 pear
  • spices: salt (pepper, a pinch of turmeric)
  • about 400 ml of vegetable broth
  • a handful of roasted almonds
  • butter (olive oil)

Pear with blue cheese

  • 2 pears
  • 3 teaspoons of brown sugar
  • 1/2 a teaspoon of cinnamon
  • 3 tablespoons of butter
  • a few drops of lemon juice
  • blue cheese optional

For pork tenderloin

  • 500 g pork tenderloin
  • pepper
  • granulated garlic
  • rosemary
  • thyme
  • marjoram
  • cumin powder
  • roasted almonds optional for sirloin coating2

Sposób wykonania / Instructions:

For couscous

  • Pour the diced onion to a deep skillet in butter and olive oil. Then add the diced apple and pear. Fry with onions. Then add the couscous. Fry, stirring with a wooden spoon for about 1 – 2 minutes. Pour the wine and evaporate. Pour the apple juice. Add turmeric.
  • Pour half a cup of hot broth and cook uncovered to absorb most of the liquid. Then pour another portion of broth and cook as before. Repeat the procedure until the couscous is cooked (about 20-30 minutes). Season with salt and pepper.
  • Mix and set aside from the heat. Put on the plates. Sprinkle with roasted almond flakes.

Pear with blue cheese

  • Wash the pear and cut it. Remove the seed seat. Melt the butter in a pan and, when it is dissolved, add brown sugar and lemon juice. Finally, add cinnamon. Then arrange the pear and cook it for a few minutes until it caramelizes.
  • Fill the prepared pear with blue cheese and put in the oven for a few minutes.

For pork tenderloin

  • Season pork with a pepper well ground on each side. Season with spices. Fry in gold in a pan with hot oil – the meat should remain elastic. Put the pork tenderloin into the pan and pour over frying fat. Put in a pre-heated oven up to 180 ° C.
  • (Time to bake the tenderloin – divide its weight in half and get the maximum time it should spend in the oven, for me 20-25 minutes. Before cutting and serving meat on the table, wait for 5-7 minutes)
  • Before serving, coat in roasted almonds
