Hake in pickled cucumbers’ sauce

When I first heard about this sauce, in one of the cooking programs, I was more than surprised. I couldn’t believe in such a combination; however, my curious nature won this battle and I decided to try it. I came into conclusion that if it was really bad, then I could serve it to someone else, for them to participate in my culinary disaster. It was a first time when I attempted making this sauce but I know for sure, that it wasn’t the last time. It absolutely won me over. It goes fantastic with fish and creamy potato puree.

Składniki / Ingredients:

Pickled cucumber sauce

  • 4 tablespoons of rapeseed oil
  • 2 tablespoons of butter half of leek – finely chopped
  • 4 pickled sour cucumbers – diced into small cubes
  • 1 cup of stock
  • 1 cup of double cream
  • dill
  • salt (white pepper, sugar and i pickled cucumber brine)

For fish

  • 2 hake fillets
  • 4 garlic cloves crushed
  • 1 lemon juice
  • 2 tbsp olive oil
  • pepper
  • salt
  • thyme
  • ginger
  • dill

Sposób wykonania / Instructions:

Pickled cucumber sauce

  • Heat the oil and the butter in a pan and fry the leek until translucent together with cucumbers. Cook for about 5 minutes uncovered, so the liquid can evaporate. Add the stock and the cream and cook the sauce on a medium heat uncovered until you reduce the sauce to the desired consistency. Season with salt, pepper and sugar and add cucumber brine if required. Top it all up with the dill.

For fish

  • Pre-heat the oven to 180°Wash the fish and dry with paper towel. Crush the garlic cloves and squeeze the juice from the lemon. Mix together to create a marinade and rub the fillets with it. Add the rest of the spices. Brush the foil with olive oil and wrap the fish. Bake for about 20 minutes.
  • Serve with creamy potato puree and garlic (add double cream and garlic to mashed potato and mix together)
