Składniki / Ingredients:

For chicken

  • 3 medium-sized chicken breasts
  • 2 tbsp dark soy sauce
  • 3 tablespoons of honey
  • 1 tablespoon rice or wine vinegar
  • 3 tablespoons of plum jam

Pumpkin pesto

  • 1 cup diced baked pumpkin (about 250 g)
  • 2 tablespoons of olive oil
  • 1 cup finely grated Parmesan cheese
  • 1/2 cup pine nuts (browned in a dry pan)
  • 1/3 – 1/2 teaspoon of freshly grated nutmeg

Additionally

  • 200 g cooked pasta

Sposób wykonania / Instructions:

For chicken

  • In a saucepan, boil the marinade ingredients, after boiling, immediately set aside from heat, cool. Put chicken breasts in a heat-proof dish and pour marinade. Let stand for two hours.
  • Bake at 190 C for about 30 minutes. After this time, remove the meat. If the sauce is too thin, you can thicken it with a tablespoon of potato flour mixed with water

Pumpkin pesto

  • Place the diced pumpkin on a baking tray and place in preheated oven to 200 degrees. Bake for about 25-30 minutes
  • Put all ingredients into a blender and mix. Season with sea salt.
