Mexican cake with chocolate glaze. Very simple and quick to make a cake stuffed with pears, prunes and pecans. Chocolate topping and caramelized pears. It is home-made, it is delicious and just in time for a lazy afternoon coffee

Składniki / Ingredients:

For the cake

  • 1.5 cups plain flour
  • 1.5 cups sugar
  • 4 eggs
  • 1 teaspoon of baking powder
  • 1 teaspoon soda
  • 2 tablespoons of cocoa
  • 7 tablespoons of water
  • 250 g butter
  • 7 dried prunes
  • 100 g chopped pecan nuts
  • 3 pears peeled and diced


  • 2 pears washed, with skin, cut into slices
  • 2 tablespoons of butter
  • ¼ cup brown sugar

Chocolate glaze

  • 100 g butter
  • 100 g icing sugar
  • 2 tablespoons of cocoa
  • 2 tablespoons of milk
  • 1 teaspoon potato flour

Sposób wykonania / Instructions:

For the cake

  • Melt butter with sugar, cocoa and water. Set aside to cool down.
  • Mix the cooled mixture with yolks, flour, baking powder and soda. Add whipped egg whites, pears and dried fruit.
  • Bake at 180 degrees in medium form for about an hour until the wooden stick is dry.

For chocolate glaze

  • Dissolve ingredients on low heat, stirring constantly (do not boil). Turn off the gas, wait for the glaze to thicken slightly and pour over the dough.

For pears

  • Melt butter in a large frying pan and arrange the slices of pears
  • Fry the fruit until slightly brown and soft, then turn over.
  • When the pears are ready, pour in the sugar, pour in a tablespoon of water and mix until the sugar dissolves. Cover the pears with the mixture. Set aside to cool and decorate the top of the cake
