Pepper muffins

Pepper muffins. Savory muffins with Parmesan cheese and Herbes of de Provence stuffed with peppers. Before serving, spread with cream cheese and sprinkled with crushed pistachios. Nice snack for work and an idea for breakfast.

Składniki / Ingredients:

For peppers

  • 2 red peppers cut into strips
  • 2 tablespoons of oil
  • 1 teaspoon of balsamic vinegar
  • 1 clove of garlic pressed through the press
  • 1/2 teaspoon of brown sugar
  • a pinch of dried thyme
  • salt pepper

For muffins

  • 3 eggs
  • 250 ml of sour cream
  • 125 ml of oil
  • 500 g all-purpose flour
  • 2 teaspoons of baking powder
  • 3 tbsp of grated Parmesan cheese
  • 1 tsp of Provencal herbs

Additionally

  • Philadelphia cheese optional
  • a handful of crushed pistachios
  • small red chili

Sposób wykonania / Instructions:

For peppers

  • Heat oil, add garlic and fry. Add balsamic vinegar, add strips of peppers, sugar, and thyme. Cook the peppers on low heat, stirring until it softens (about 10 minutes)

For muffins

  • Whisk eggs for fluffy mass. Add sour cream and oil. Using an electric mixer combine the ingredients. Add flour and baking powder in four parts. In the end, add parmesan cheese and herbs.
  • Fill muffin cups 1/2 full and put in the middle 1 tbsp of peppers. Then fill muffins cups to cover peppers( up to 3/4 of muffin case). Then put them in a preheated oven. Bake for approx. 25 minutes in the oven preheated to 180Cooled spread with Philadelphia cheese and sprinkle with crushed pistachio nuts
