Mushrooms stuffed with leek and feta

Mushrooms stuffed with leek and feta served with pork tenderloin are a delicious idea for dinner. Meat marinated in soy sauce and mustard. All served with a creamy leek sauce.

For tenderloin

  • 1 pork tenderloin about 500 g
  • 1 tablespoon soy sauce
  • 1 teaspoon mustard
  • 2 teaspoons of coarsely ground or crushed colored pepper
  • 2 teaspoons of oil
  • crushed pistachios

For leek sauce

  • 2 leeks cut into slices
  • 1/2 cup white wine
  • 250 ml single cream
  • salt
  • pepper
  • 2 garlic cloves crushed
  • a pinch of marjoram

For stuffed mushrooms

  • 6 portobello mushrooms, stalks removed and chopped
  • 1 tablespoon of oil
  • 125 g feta cheese
  • the white part of the leek
  • 1 teaspoon butter
  • pepper
  • 1 tablespoon of parsley

Sposób wykonania / Instructions:

For tenderloin

  • Heat the oven to 190 degrees Rub the meat with soy sauce and mustard. Season with a pinch of sea salt, then rub with olive oil, coat in pepper. Brush the roulade with oil or oil. Heat a large frying pan, put the tenderloin and fry until golden brown on each side (about 7-8 minutes frying). Transfer to a baking tray and put in the oven, bake for 16 minutes. Remove the meat, put on a platter, leave for about 10 minutes to let the meat rest – do not cut at this time). Before serving, coat the tenderloin in crushed pistachios.

For leek sauce

  • Heat oil in a frying pan. Fry leek till translucent. Season to taste. Add wine. Simmer together for about 15 minutes. At the end of the stewing, add cream. Blend until a smooth and creamy sauce

For stuffed mushrooms

  • Clean mushrooms, cut out the legs. Fry the hats on both sides with a tablespoon of olive oil.
  • Heat the olive oil in a frying pan, add the onion and garlic and fry until soft. Add the chopped mushroom stalks and pepper and cook until softened. Mix with parsley, season with freshly ground pepper. Cool and combine thoroughly with feta cheese.
  • Spoon the mixture into the baked mushrooms. Place each mushroom on aluminum food foil, roll up the edges of the foil and squeeze slightly at the top, forming a shapely packet. Place in oven preheated to 175 degrees C and bake for about 10 minutes.
