Składniki / Ingredients:

For a pearl barley risotto

  • 75 g hazelnuts
  • 2 tablespoons of oil
  • 1 onion diced
  • 4 garlic cloves crushed
  • 250 gr pearl barley
  • 400 grams of frozen peas
  • 400 ml vegetable stock
  • 1 lemon

Chicken breast in soy sauce

  • 2 medium chicken breasts
  • salt and pepper
  • ½ tsp hot pepper powder
  • 1 teaspoon of sweet pepper powder
  • 1 teaspoon dried rosemary
  • 2 tablespoons of oil
  • 2 tbsp light soy sauce

Salad

  • 100 gr cooked green beans
  • 100 grams of sugar peas cooked
  • a handful of black olives
  • lettuce
  • a handful of strawberries
  • feta

For salad dressing

  • oil
  • mustard
  • balsamic vinegar
  • salt
  • pepper
  • sugar

Sposób wykonania / Instructions:

For a pearl barley risotto

  • Place the hazelnuts in a plastic bag and lightly smash with a pestle. Then place them in a preheated pan with a little oil and fry for a few minutes until golden. Be careful not to burn. Set aside.
  • In a separate pot, add a diced onion and fry on a tablespoon of olive oil (about 10 minutes). Add salt and garlic. Take off the fire.
  • Rinse pearl barley and cook according to the instructions on the packaging. While cooking pearl barley, put the onion back on fire. Add to it 200 gr of frozen peas and 400 ml of hot stock. Boil and cook together for about 2 minutes. Blend everything up.
  • At the end of cooking, add the remaining 200 grams of frozen peas to pearl barley. Cook together for a few minutes. If necessary, drain from water. Combine the cooked pearl barley with peas together with the previously prepared mashed peas and onions. Season to taste. Serve with squeezed lemon juice and hazelnuts.

Chicken breast in soy sauce

  • Wash and dry the chicken breasts. Season with spices. Rub with oil and soy sauce. Leave to marinate for about 1 hour.
  • Heat the oven to 180 Place the fillets and marinade in an ovenproof dish and bake for about 25 minutes, turning over to the other side in the meantime.

Salad

  • Combine vegetables with lettuce, olives, strawberries.

For salad dressing

  • Mix the ingredients well and pour the vegetables over them.
