Chicken breast stuffed with pumpkin and feta cheese

Chicken breast stuffed with pumpkin and feta cheese. The breast tastes very good with pumpkin. Feta cheese lifts up the taste of a delicate pumpkin. All served with a creamy pumpkin sauce enriched with ginger and nutmeg. Chicken breast served with broad bean salad.

Składniki / Ingredients:

For a chicken breast

  • 2 chicken breasts
  • 100 grams of feta cheese
  • pumpkin slices
  • 8 slices of Parma ham
  • sweet pepper
  • granulated garlic
  • ginger
  • coriander
  • Roman cumin
  • nutmeg

Pumpkin sauce

  • 1 medium onion diced
  • 400 g of home-made pumpkin puree
  • 250 g ricotta cheese
  • a pinch of cinnamon (ground ginger, ground nutmeg, grated cloves, grated whole herb)
  • salt and pepper to taste

Sposób wykonania / Instructions:

For a chicken breast

  • Wash the breasts and cut them to obtain a piece of meat that can be spread flat. Sprinkle the spices on both sides. Place the pumpkin slices and feta on the meat. Roll up in a roll. Wrap each breast in 4 slices of Parma ham. Put the breasts wrapped in ham in a casserole. Put in the oven preheated to 180 C and bake for about 40 minutes

Pumpkin sauce

  • Fry the diced onion on the pan. Add pumpkin puree, salt, pepper and other spices. Add ricotta cheese to the pumpkin puree. Heat and the whole blend to a smooth mass.
  • Serve breast with pumpkin sauce and any toppings. For me baked potatoes and salad with broad beans
