Pork tenderloin in a blackberry sauce

Pork tenderloin in a blackberry sauce is a dish that does not require a lot of time. The meat is made quickly because the tenderloins do not need long processing. To this, sour, slightly sweet blackberry sauce with the addition of red wine and my additional Hasselback potatoes.

Składniki / Ingredients:

For pork tenderloin

  • 300 gr pork tenderloin
  • salt
  • grounded pepper
  • granulated garlic
  • rosemary
  • thyme
  • marjoram
  • mustard seeds
  • cumin
  • 100 grams crushed pistachios

For blackberry sauce

  • 300 g of frozen blackberries
  • 1 tablespoon of brown sugar (add more if needed)
  • 1 teaspoon of balsamic sauce
  • 1/4 glass of red wine
  • salt (pepper)

Sposób wykonania / Instructions:

For pork tenderloin

  • Season meat with a pepper on each side. Season with garlic, rosemary, thyme, marjoram, mustard seede and cumin. Fry in gold in a pan with hot oil – the meat should remain resilient. Put the pork tenderloin into the pan and pour over frying fat. Put in a pre-heated oven to 180 C.
  • (Time to bake the tenderloin – split its weight in half and get the maximum time it should spend in the oven, for me 15 minutes. Before cutting and serving meat on the table wait for 5-7 minutes)
  • Cover meat wit crushed pistachios

For blackberry sauce

  • In a saucepan, place the blackberries, add the sugar and simmer until the fruit will release the juice and become soft. Wipe through a sieve and pour the juice back into the pot, add wine, balsamic sauce and simmer until the sauce becomes thick. Season with salt and pepper.
  • Cut the tenderloin into slices and serve with blackberry sauce
