Potato dumplings, mushroom sauce and beetroots. Traditional Polish dinner. Delicious, tasty. A bit time cosuming but much worth it.

Składniki / Ingredients:

For beetroots

  • 1 kg of beetroot baked in foil
  • Wash the beets thoroughly. Do not peel. Place on a baking tray and put in the preheated oven to 180 degrees. Bake for about 40-90 minutes, depending on the size of the beet.
  • 2 red onions cubed
  • 2 apples peeled and diced
  • 1 tbsp brown sugar
  • 1 teaspoon of salt to taste
  • a pinch of pepper to taste
  • juice squeezed from 1/2 lemon
  • 2 tbsp oil

For a roux

  • 3 tablespoons of butter
  • 3 tablespoons of flour

For potato dumplings

  • kg of potatoes
  • 2-3 tablespoons of wheat flour
  • 2 tablespoons of potato flour
  • salt pepper

Mushroom cream sauce

  • 200 grams of chestnut mushrooms sliced ​​
  • 1 onion diced
  • 1-2 cloves of garlic crushed
  • 3 tablespoons of sour cream
  • frying oil
  • salt
  • pepper

For beetroots

  • Grate the baked beets on a coarse grater. Fry the onion in oil. Add beetroot and grated apples to the onion. Add salt and pepper. Then lemon juice and sugar. Fry for a few minutes together. Then add a roux. Simmer for a moment to thicken, without interrupting mixing.

For a roux

  • Put butter in a pan and dissolve. Add flour and mix thoroughly with butter in a wooden spoon. Fry, stirring constantly until light brown

For potato dumplings

  • Divide the potatoes into two parts. Grate the bigger part on a fine mesh grater. Then transfer to the cloth. Tightly wrap and squeeze out of excess water. Let the water from the potatoes stand for several minutes until the starch falls to the bottom of the bowl. Cook the other part of the potatoes and mush up.
  • In a bowl, combine grated and mashed potatoes. Season the dough with salt and pepper. Add starch that has settled to the bottom of the pot. Add flour. Knead on a board dusted with flour
  • In a large pot, boil the water. Cut the dough into even slices, then make a roll. Cook for a few to 3-4 minutes after rising to the surface.

Mushroom cream sauce

  • Place chopped onions and garlic in oil. On a separate pan, fry brown mushrooms over high heat. Add the onion with garlic. Put down the fire and cook together for several minutes. If necessary, add a bit of water or vegetable broth to avoid burning the mushrooms. At the end of cooking add sour cream and mix well.
