Cheesecake with mango mousse

Cheesecake with mango mousse on a chocolate bottom. Chocolate bottom, creamy cheesecake, mango mousse and peach jelly. I can only write that it was delicious.

Składniki / Ingredients:

For chocolate bottom

  • 4 eggs
  • 2 spoons of baking powder
  • 2 cups of flour
  • 1 dark chocolate
  • 1 cup milk
  • 1.5 cup of sugar
  • 150 g butter

To soak

  • rum
  • water

Cheesecake

  • 1000 ml full fat cream cheese
  • 300 grams of white chocolate dissolved in a water bath
  • 12 gelatin leaves
  • 1/4 cup of fine sugar

For mango mousse

  • 1300 ml canned mango pulp
  • 13 gelatin leaves

For jelly

  • 1 peach or orange jelly

Sposób wykonania / Instructions:

For chocolate bottom

  • Beat eggs with sugar into a creamy, fluffy mixture. Put butter, chocolate and milk in a saucepan. Bring to a boil. Set aside to cool.
  • Combine and pour all ingredients into a 24 cm / 30 cm cake form. Bake for 50 minutes at 180 degrees. When cool, cut off the top. Soak as desired. For me it was rum mixed with water.

Cheesecake

  • In a mixing bowl, combine cheese and sugar.
  • Soak the necessary amount of gelatin in cold water for about 5-7 minutes, then remove and lightly squeeze.
  • Heat the squeezed gelatin in a small pan and dissolve. Add melted chocolate in a water bath to dissolved, warm gelatin and mix. Then add 2-3 tablespoons of cheese mixture, each time mixing. Now you can pour the gelatin into the cheese mixture and combine. Pour onto a chocolate bottom and refrigerate until set

For mango mousse

  • Heat mango pulp in a saucepan.
  • Soak the amount of gelatin in the leaves in cold water for about 5-7 minutes, then remove and lightly squeeze.
  • Heat the squeezed gelatin in a small pan and dissolve. Add mango pulp to the dissolved, warm gelatin and mix. Pour the cooled mango mixture onto the layer of cheesecake. Put in the fridge to set.

For the top

  • Make jelly according to the instructions on the packaging and pour lightly on a mango mousse. Put in the fridge until set
