Stuffed potatoes with mackerel paste

Stuffed potatoes with mackerel paste. I’m not a big fan of fish, so if I want to eat a healthy meal with fish I try to prepare that way, that I can enjoy it. This even for a fussy person like me is delicious and tasty.

Składniki / Ingredients:

Smoked mackerel paste with horseradish

  • 1 smoked mackerel (without skin and bones)
  • 1 tablespoon of horseradish
  • 2 teaspoons dijon mustard
  • handful of chopped parsley finely
  • 2 tablespoons of sour cream
  • salt (pepper)
  • 1/2 lemon juice

For stuffed potatoes

  • 4 potatoes of medium size
  • rapeseed oil
  • salt
  • pepper

Sposób wykonania / Instructions:

Smoked mackerel paste with horseradish

  • Remove the skin from the fish – the odd bone is fine as the mixture will be blended. Add the fish to the bowl
  • Add the horseradish, mustard, black pepper, crème fraîche and lemon juice and blend to a paste by using fork.

For stuffed potatoes

  • Preheat the oven to 200 ° C. Wash the potatoes thoroughly and dry them. Do not peel.
  • Using a brush or a paper towel, rub the potatoes with rapeseed oil. Season with salt and pepper.
  • Put the potatoes in the pan and bake for 45-60 minutes (depending on the size of the potatoes) until the potatoes are browned.
  • Get out of the oven. Hollow the center (we will not need it). Put the mackerel paste in the center and put it back in about 5 – 10 minutes
