Avocado, asparagus soup

Avocado, asparagus soup. Creamy and healthy soup with avocado and asparagus. Green, filling with the addition of wine. Great for a light dinner

Składniki / Ingredients:

  • 1 bunch of green asparagus
  • 1 leek sliced
  • 1 tbsp of butter
  • 2 cloves of garlic crushed
  • 1/4 glass of white wine (not necessarily)
  • 2 cups of chicken broth
  • 2 ripe avocados peeled (and chopped)
  • fresh herbs: 1 tablespoon of chopped dill and parsley
  • 2 tablespoons extra virgin olive oil
  • sea salt and freshly ground black pepper

Sposób wykonania / Instructions:

  • In a large pan heat the oil, add the chopped leek and saute for 5 minutes. Cut the asparagus soi t could fit into your steamer basket. Cover and steam until the asparagus are bright green and tender ( 3-5 min ). Then cut into halves and put together with the butter into a pot with a thick bottom. Sprinkle with salt, add crushed garlic cloves. Simmer for about 2 minutes.
  • Pour the wine and let it evaporate for 2 minutes. Then add the stock and cook for a few minutes until the asparagus are soft. Put into a blender or a food procesor and mix with avocado, leek, fresh herbs and extra virgin olive oil until smooth. Pour it back into the pot, season with salt and freshly ground black pepper, heat and serve..
