Składniki / Ingredients:

For filling

  • 1 cup of boiled buckwheat
  • 1 tablespoon of vegetable oil
  • salt and black pepper
  • ground cumin
  • 1 onion diced
  • 2 apples cut into cubes
  • 1/2 teaspoon of brown sugar
  • 2 bay leaves
  • 2 juniper seeds
  • 2 allspice
  • 40 ml rapeseed oil
  • 250 g boiled white beans
  • 1 tablespoon of soy sauce
  • 1 tablespoon chopped fresh parsley
  • 1/2 teaspoon fresh thyme
  • 1/2 teaspoon of dried marjoram
  • salt and black pepper


  • 5 to rtillas
  • 4 eggs
  • Parmesan optional
  • a bunch of asparagus cooked

Sposób wykonania / Instructions:

  • Cook the buckwheat groats
  • Put the oil in the pan and add chopped onion and apple. Add spices (bay leaf, juniper, and allspicand brown sugar. Fry for a few minutes. Remove the spices and the bay leaf.
  • Put the beans, soy sauce, thyme, marjoram, fresh parsley and spices into the blender dish. Mix to get a paste. Add onion with apples and buckwheat. Mix well
  • Place tortillas in the round, baking form. Mix buckwheat mixture with beaten eggs and parmesan cheese. Pour into a springform pan. Cover the top with asparagus cooked for a moment. Bake in an oven preheated to 180 C for about 40 minutes. Serve hot or cold.
